Leghorns are flighty. I think that is good because it helps them escape predators. I don't think Leghorns are louder than average.

yes, I have a light brahma, a buff orpington, a barred rock and an barred ameruacana.. they will all probably lay brown so i want to mix it up...

If you don't care about pure breeds, you might get a hybrid, such as a California White. They are supposed to be calmer than a White Leghorn.
