What breed are these? And are they definitely hens?

Both are definitely hens. Probably cross breeds, although the first one could be a Sapphire gem. The second one is very pretty!

Older hens do occasionally look like younger cockerels.

She looks very like the Jersey Giant cockerels I used to have, hence me voting boy! I guess the friend knows by now she is a girl

the first one looks like some sort of egg laying hybrid and the second one probably is a mutt. nice chickens.
