What can you do with Apple Cider Vinegar?

I like to slice cucumbers in it in the summertime & let them get really icy cold---yum!

1 tblsp cornstarch
2 tblsp cold water
1/4 cup apple cider vinegar
1/4 cup soy (more or less for taste)
1/4 brown sugar
2 tsp ginger powder
1 tblsp minced garlic
1 tsp black pepper (ground)

4 chicken breasts (boneless/skinless)
1/2 cup shredded parmesan (asiago is great too!)


Mix cornstarch and water til smooth, add other liquid and powdered ingredients and bring to a boil. The mix will thicken. Take off heat.

Spray a baking pan with stick free spray, place chicken breasts in pan. Oven to 375. Pour sauce over the chicken and cover with tin foil. Cut small holes in foil to vent and cook about 45 minutes or until juices run clear. Right before serving, sprinkle the cheese on top of the breasts and let it melt.

Goes GREAT with sweet peas and Rice-a-Roni Fried Rice or Broccoli/cheese rice.


ETA to add that I use more or less of the water, vinegar, brown sugar and soy depending on my mood

You can double this recipe for more meals. Makes GREAT leftovers.
