I really like the fritters and wished I had made more last year. I’m not a big fan of zucchini bread and prefer my brownies to be all chocolate. But thanks for the ideas.Shredded zucchini can be frozen in 2 cup batches for use in zucchini brownies or bread. I do that with ones that get big.
I also cut in half/remove seeds and stuff with Spanish rice then bake and too with cheese. It's pretty good that way too.
