What did you do in the garden today?

Shredded zucchini can be frozen in 2 cup batches for use in zucchini brownies or bread. I do that with ones that get big.
I also cut in half/remove seeds and stuff with Spanish rice then bake and too with cheese. It's pretty good that way too.
I really like the fritters and wished I had made more last year. I’m not a big fan of zucchini bread and prefer my brownies to be all chocolate. But thanks for the ideas.
 
Apple Fritters

Ingredients

  • 1 quart vegetable oil for deep-frying
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon white sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2/3 cup milk
  • 2 eggs, beaten
  • 1 tablespoon vegetable oil
  • 3 cups apples - peeled, cored and chopped
  • 1 cup cinnamon sugar
Directions

1. Heat the oil in a deep-fryer or electric skillet to 375 degrees F (190 degrees C).

2. In a large bowl, stir together the flour, sugar, baking powder and salt. Pour in the milk, eggs and oil and stir until well blended. Mix in apples until they are evenly distributed.

3. Drop spoonfuls of the batter into the hot oil and fry until golden on both sides, about 5 minutes depending on the size. Fry in smaller batches so they are not crowded. Remove from the hot oil using a slotted spoon and drain briefly on paper towels. Toss with cinnamon sugar while still warm.


This is the one I use but double it
 
Peach cobbler, peaches in a simple syrup on pound cake, peach ice cream.....

Blanch. Skin. Slice. add sugar syrup. Freeze. Done.

I have an ice cream machine in need of some well-deserved attention and so I think I will make some yummy peach ice cream (a flavor I’ve never had before!) and then do the second quote here if I have any fruit left.

I need to make big cages from cattle panels, it just didn't happen in time this year. It's a must for next year.
I used 8 foot t-posts and cattle panels to make wall frames in the garden. I can easily trim and tie up anything I plant in the row that year. Every row has them.
 
I couldn't find the recipe I used last year @Sueby, however I looked it up on the internet again and this is pretty much what I remember the recipe was from last year. You can adjust the seasoning to suit your own taste. I added my own step and salted the grated squash and let it sit for a few minutes before squeezing the liquid out. I fried mine lightly because I knew I would be freezing them after they cooled. I reheated the frozen fritters in my countertop convection oven.
