What did you do in the garden today?

That is pretty awesome smart. I wouldn't mind having that as part of our emergency kit either. lookie there... I just justified my future purchase ;)
and they are geared for spillage... When I designed my Summer Kitchen i made a place for processing and canning.... heavy duty screens .... and on the cool side of the house... Pleanty of water access too and a happy tree which will love it. after a bit of a filter... that is.

I am hoping to get one of those cookers designed for cooking a turkey ... for canning...

You know single burner off propaine... Down low so you can see what you are doing loading and unloading .... I can adjust the height with concrete blocks...

How does that work for you? I don’t own a canner now, and buying a water bath canner seems silly since I will eventually want a pressure canner. But I read that the pressure canner can get so hot that a glass stovetop can break! So barring a new stove, I’m dehydrating.

I have been thinking of getting something like this. We don’t have (or want) a grill. Too concerned about attracting bears.

Yes, a pressure canner can make a glasstop explode.

I have a gas range and do most of my waterbath canning in an italian waterbath pot with an indicator on the lid, which can also be a steamer. When I pressure can, I HIGHLY, CANNOT RECOMMEND HIGHLY ENOUGH, an ALL American brand canner. It is worth every blessed penny you pay extra for it. It is a weighted gauge with with an additional gauge on it, and extra locking turns around the lid. I have the one that holds 4 quarts, which is perfect for me. I use it for meats, things with meats in it, soups, beans and everything low acid.

I have only had to use the propane burner outside twice. One time I wanted to have all my canners going and the option of having the third one outside (I was out of burners) was too good to pass up. The other time canning HAD to be done, and the AC was on fighting dewpoints of 78 degrees and temps of 100. There was NO WAY I was going to steam up the kitchen water canning! LOL.

I also prefer to pressure can over gas as the temperature remains the same. On all electric stovetops, the temperature fluctuates as the burners heat up and cool, rinse and repeat. That can make it hard to maintain even pressure.

I picked a cucumber, and took pictures of the baby eggplants that are finally growing!! Plus pictures of the flower buds on the pole beans and the baby green peppers that are finally showing up! Will pick green beans ( bush type) tomorrow and harvest some fresh basil for a friend! Oh, and pick another cucumber to take to her as well.
