Unless you know it's a better variety, most store bought Garlics are the Elephant variety. If you are cooking with them, they are ok, if you plan to ferment them, I have heard from many that they do not do well there. Either way, be careful of moisture, while they like a lot of water, they will NOT tolerate soaking in it, and will neck rot. I know this from unfortunate experience. I am not sure of the variety I purchased, but I know it's imported from Spain. It appears very similar to Spanish Roja. It's definitely a hardneck variety.

DO NOT wait for buying seed, so many stores and suppliers ran out early last year and I've seen it happening this year too. It might be fine of you are just planning on planting the most common varieties but if you have some special seeds you want to try you'll have better luck if you buy early.I'm holding off on looking through what seeds I have because I wouldn't be able to start seeds for at LEAST one more month, and it will just make me impatient to plant them all (yes, every variety in my box)!![]()
Elephant garlic is the bigger bulbs that are not really a garlic but used similarly in cooking and is milder in taste. It's that what you are referring to?
