What did you do in the garden today?

Still sore from all the kneeling and bending yesterday from cleaning up the old heather and planting more. Today is likely the end of summer like temperatures. It’s currently 72F, tomorrow is forecasted to be 10 degrees cooler. It seems funny, when the breeze picked up it was literally raining leaves and pine needles. I finished up the cookbook I put together for DD and wrapped it. We had hoped to experience a cranberry harvest but apparently the bogs are closed to visitors due to COVID. Instead we’re heading to a botanical garden tomorrow. We aren’t likely to get frost for at least another week. I’m looking forward to cooler temps. It makes outdoor work a bit easier. You should be able to get the recipe for the Green Tomato Salsa Verde recipe from the Ball canning website @BReeder! I have it saved on my computer but I’m on my phone right now.

Got that done this morning, then decided to run down to the corner store for a soda.... Car wouldn't start. Turn the key and get meh meh meh meh. It sounded hilarious and pathetic. So off the Walmart I went for a new battery. It would pick the first really cool morning to up and die, lol. There goes $140, ah well.

Spicy Green Tomato Salsa

Ingredients


12 ½ cups chopped green tomatoes
1 onions, chopped
4 jalapeno peppers, sliced into 1/2-inch-thick rings
1 cup chopped fresh cilantro
¼ cup raw sugar
3 tablespoons minced garlic
2 ½ tablespoons chopped fresh oregano
1 tablespoon cayenne pepper
1 cup limes juice
2 tablespoon apple cider vinegar

Directions

Combine green tomatoes, onions, jalapeno peppers in a large bowl.

Mix cilantro, sugar, garlic, oregano, and cayenne pepper together in a small bowl.

Fill a blender with about 2 cups tomato mixture, 1 teaspoon lime juice, and 1/4 of the spice mixture; blend to desired consistency and pour into a large bowl. Repeat blending with remaining tomato mixture, lime juice, and spice mixture, working in batches, until all ingredients are blended. Stir vinegar into salsa.
 
@Wee Farmer Sarah I watched a cranberry harvest one year on our way out to the cape. I also did the cranberry festival somewhere near Sturbridge. The harvest was very neat to watch, I hope you & DD get to do it next year.

So I canned 30 half pints of the 'Winters Delight Jam' to give as gifts. It's a recipe from Pomona (I love their pectin) & it's low sugar. I'm not sure how everyone will feel about it, but I cringe every time I add 6 cups of sugar to a jam recipe. This one used 2. You can def tell in the texture, but I'm hoping people will like it, we'll see.

That means I'M DONE CANNING FOR THE YEAR! :celebrate :yesss: Putting all the canning equipment away till next season.

And speaking of processing the tomatoes and peppers, solenoids had a green tomato salsa recipe for canning. Can you please share? It was probably already posted, but I'm not finding it.
This is mine, I really like it.
Salsa Prep Time 45 minutes Cook Time 50 minutes Total Time 1 hour 35 minutes Yield 6 quarter-litre (1/2 US pint) jars

Ingredients
3 1/4 lbs green tomatoes (measured after peeling and chopping coarsely. About 7 cups / 12 medium
1/2 lb. peppers (mixed, such as jalapeno, Habañero or Scotch bonnet peppers. About 5 to 10.)
3/4 lb. onion (peeled and chopped. 2 cups / About 2 large.
2 cloves garlic (finely chopped)
1/2 cup / 4 oz lime juice (bottled. )
1/2 cup loosely packed. 1 oz coriander (aka cilantro. Fresh, finely chopped.
2 teaspoons cumin (ground)
1 teaspoons oregano (dried)
1 teaspoons salt
1 teaspoons ground black pepper

Instructions
1. Wash the tomatoes. Blanch the tomatoes for about 60 seconds in boiling water, then plunge immediately into very cold water. Cut off and discard the peel. Add tomato to a large pot. Wash and prep the pepper, onion and garlic, and add to same pot.
2. Add the lime juice.
3. Bring to a boil.
4. Add in the remaining ingredients.
5. Lower heat and simmer for 3 minutes.

6. Spoon into 1/2 US pint or pint jars.
7. Leave 1/2 inch headspace.
8. De-bubble, adjust headspace.
9. Wipe jar rims.
10. Put lids on.
11. Process in a water bath or steam canner.
12. Process either size jar for 20 minutes; increase time as needed for your altitude.
13. Best after at least a month of jar time.

Quitter! :oops: Just kidding. I've started pressure canning dried beans so I can avoid buying the cans at the store and because we go though a lot of beans. This means I'll have the canning stuff ready to go any time. I use my instant pot for pressure canning pints and as soon as I can I'll be ordering a presto electric pressure canner for quarts.

Just finished canning 5 pints of green tomato relish and it's really delicious. Next will be a hot batch made with the ingredients that @penny1960 posted a bit back.

I've been too lazy to get the yard work done, not needing to rain gives me a way out of honest labor. I need to rearrange my morning tasks. Now I take the dog out to the yard (before feeding her), clean the poop boards, feed the rabbits, open the barn/garage, feed the cats, grab a poop bag, take the dog for a walk, (still before feeding her) then get home and finally feed the dog. I need to rearrange the order so I can stay out and do garden work. I suppose I could let the dog out, go back in, make her breakfast, and then feed her so I can just stay outside once I start doing chores.

It’s supposed to get down to 39 degrees in the wee morning hours so I picked everything I could in the garden. Lots of green cherry tomatoes, jalapeños and small to very small green peppers. Oh, and lots of basil. I cooked down the last bag of San Marzano tomatoes in I had in the freezer. Used the results to make spaghetti sauce for dinner. I’ve been drying the basil in the oven all evening and still haven’t finished. I really need to try pesto some day to see if I like it. It would be a great way to use some of the basil. I’m glad someone asked about green tomato salsa recipes because I was in need of those recipes too!

This happened to me last year, is why I laughed...on the way to an appointment.
You got off cheap, it could have been "time to buy new tires" before Winter. 😉
