What did you do in the garden today?

DH likes boneless chicken thighs and I have yet to figure out how Tyson & the like manage to do that..... :D
I cut up the chickens and rabbits and I never bone anything. I tried in the past but it's a huge pain in the patootie and I just don't do it anymore.
I have had a problem with some chickens, even young ones that are 6-8 months old, not being tender. Sometimes they are so tough that we can't eat them at all. If anyone has any tricks of the trade on this....I'm all ears!
In my limited experience, chickens over 3-5 months should be stewed, pressure cooked, slow cooked, or made into stock.

Spouse is doing well after surgery, it’s been 48 hours now. But weeks to go…let’s hope that leg heals well!

My onion starts are doing well. Now I need to get serious about some of the other seeds.

One chicken died the other day..found her under the coop. But, no injuries and no outward signs of illness. She seemed a good weight, but her nails were quite long. Of course, with bird flu showing up here and there in eastern and Midwest US, I’ve been looking for any signs of illness…none so far. We do not have any bodies of water nearby, and never see wild birds in the run area since we have netting up, and the run has a roof. I think this chicken was 2 or 3 years old. Sometimes, they just die.
 
I SAID I wasn't going to buy any more seeds.....then Johnny's had to send me their new catalog. :he I'm finding it VERY hard to resist...... Omg. I love the way they put this catalog together.....pretty awesome.

@Acres4Me - I'm sorry you lost your girl. I lost another one last weekend too. She was one of the Blue Andalusians that was sick right before christmas. Looks like she died overnight and fell off the roost. She's the 3rd Blue Andalusian that I've lost in the past 4 months. I'm down to only 1 of that breed now. I did hatch out some eggs from them but being that my roosters are other breeds, they'll be mixed breed. I did see that Bird Flu was doing around in the midwest. I live 800 miles from there or more but with migratory birds, I think anything is a possibility. I've been keeping an eye on my flock too....

Both Johnny's and Territorial affect me that way, and the fact that they are good honest companies that don't try to sell you something that isn't really a good fit for your climate or something from a fake colorized picture. I trust them.

:lau Sorry but I had to laugh . You have much to learn . You will never get a tender 6-8 month old chicken . Tenderness is age related . A fryer should be about 8 weeks old more or less . I knew someone who grew for Banquet TV dinners . They dropped off chicks and came back 5 weeks later to haul them to processing . Just the right size for TV dinners . The old way of grading was fryer , broiler , roaster and stewing . Named for the best cooking option .

Yep....I own my neophyte status! 😄 I actually don't have any fryers. Most of my birds are dual purpose (Orpingtons, Australorps, Ameraucanas, Cream Legbar, etc...). Some are smaller/skinnier birds (Starlight Green, Prairie Bluebells, Gamehens, Blue Andalusians, etc...). And of, course, I have barnyard mixes...although all my roosters are pretty big boys. I culled a roo last fall that was the size of a small turkey...no joke.

So none of my birds are fryers although I am very tempted to get some....ha ha. And I wouldn't say we NEVER get a tender bird.... We have had a couple which were very tender and succulent. DH usually grills them. Sometimes he can overcook them which, naturally, makes them like hardtack almost. But I'd say 60-75% of the time, they seem tougher than I'd like.
