What did you do in the garden today?

I have found some styles of Skechers the best fit for my feet. When I last bought sneakers I got three pairs, put the extras in the closet. Last year I found the exact same model number online, good price, ordered two pairs. Now I have enough sneakers for several years!

And now I don't have to try on 20 pairs in the store before finding some that fit!
Just like my house ! LOL
 
Today is going to be miserable. It's only 11 am and already this hot.

I finally got a small ear on my sour dough bread with the 5-minute method. I baked this sour dough uncovered with water poured into the catch pan. Next time, I will steam it with a cover for 5-minute. What I notice was the sour dough puffed up after 5-minutes and formed a dry skin before I cut into it and my cut after watching the scoring video was a little different and had a smoother stroke. I feel like I can get a better ear by scouring into a wet dough without the 5-minute method.

In conclusion, I think it was how I scored the wet dough in my previous attempts that prevented the ear to form. Keeping the blade flat made a difference. I'll probably master the score cut on my next try on a wet dough.

That was us yesterday with NO wind at all. The dew point was 77'! It was unholy at a swampy feel of 108.
Today, however, every late June bride is celebrating as our HIGH will only be 80, the air mass is DRY, and there is a BREEZE for all those great photos and outdoor ceremonies!

It's a flap of the dough that is created from the expansion cut in the dough. As the loaf rises, if the cut was made at the correct angle and the heat and steam are timed right, the dough crust peels back and creates a flap of dough that resembles an ear and gets wonderfully crusty. They're cool, but I don't shoot for having one as they are hard to cut( messy), and tough to chew, which is not my goal when making daily foodstuffs. Pretty though.

I did that with work boots, by the time I got to the last pair a few years later my feet had grown. Someone else took some redwings back because they were falling apart "new" in the box. He was told they hadn't made that sylte in over a decade, that they had fallen apart due to age not poor workmanship.
 
I hate gophers... I feel like I'm always one step behind them.

I have been pruning and watering over the last few days. I need to get some taller stakes for some of my tomatoes, I didn't expect them to outgrow the broken ones, especially this soon.

Peppers in the middle, beans on the left. There's like 5 billion jalapenos there. I planted two cayenne pepper plants and I should have just done one. Those are loaded as well. Going to have lots of pepper jelly! Lots of salsa and pickled peppers!

Beans on the left, Bell peppers Middle, shallots and a random onion in the far end, tomatoes everywhere, I even pulled a few cherry volunteers this year, I usually leave them but there's too much competition for water with how many there were.

The ear flap on the expansion score kind of tells us if we did things right. I think my dough was a little over proofed because I didn't get the oven spring like in the 5-minute scoring video I posted the other day, so I need to make some adjustments.

I have been proofing my dough at 100F and it doubles in size within 2 hours whereas it usually takes 4 hours at my room's temperature.

I sped things up with a higher proofing temperature, so I need to get my dough in the refrigerator right after the final shape. I left it out at room temp after shaping for an hour before placing it in the refrigerator the other day.

I got two half sheet baking trays filled with blanched peas into the freezer. I have at least one more tray full in the refrigerator. I’m hoping to get that all processed tomorrow. After that I get to “rest” until the beans start growing. All beans, string green, black turtle and pinto beans are starting to blossom.
