Same basic principle, yeah you can do it. Fill a jar, add the sea salt brine water, add the spices you may or may not want to add, close it. Open it once a day to let out built up gasses. and in about 2 weeks it will likely be ready... may take more or less time depending on Temperature. It would actually taste good and you can store them if you have too many to eat this year summer. I cut up yellow squash and fermented it. Come to the south Oregon coast, largely undiscovered by the masses, beautiful scenery, maybe 2 or 3 days a year in the 80's and a long growing season, especially if you have a greenhouse. We have a reputation for rain but from the middle of June through to the middle of September we get no rain to speak of.DH & I are trying to find a cooler place to retire, we hate this heat.
That sounds so delicious!Had a gallon of fresh puree from the tomato squishing party the other day. I simmered it down all day added some onion, garlic, salt and pepper and ZOWIE best tomato soup EVER!
At a minimum they keep the soil from running off in the rain and a lot of them bring in pollinators and left to it's own devices, nature heals a lot of wounds.You know I also think that weeds heal the soil.

I'm going to try making some dehydrator zucchini chips later today.I made a batch of the spicy pickles that called for zucchini but I used cucumbers and then I made a batch of tomatillo salsa.
