When we lived in TX, we found The Lazy Dog restaurant. They had this Pork Belly BLT, and it was the most amazing sandwich I have ever tasted! They had a lot of really delicious food. *drools*It’s what is used to make bacon yes. I sliced it myself, so not exceptionally thin. I’ll probably end up freezing some of it, it’s 2 lbs of meat so far too much for one meal.

Sliced beetroot on burgers is a local tradition.Okay, so what do you folks put on your messy burgers other than ketchup, mustard, and pickle relish? I use, fried onions, raw onions, sauteed mushrooms, fried bacon, sliced tomatoes, and sometimes bbq sauce.
I was thinking BLTs would be the way to go but the family wanted to try this other recipe. We had it with homemade BBQ sauce topped with homemade coleslaw. Anywho... I'm not sure how many of those ingredients you have on hand, but you said pork belly and of course it popped into my head (and got me drooling)!
Aioli and a thin slice of purple onionAnd here I thought we were the only ones to do this! I serve them open faced especially if I've made bacon to go on them. Then the ground mix goes on one side and the bacon goes on the other.

Nothing doing in the garden much, once it clears off a little I'll comb the vines for tomatoes, salsa sounds like a good use. I got the most recent batch of huckleberries cleaned and packed in half pound bags in the freezer. Huckleberry pancakes sound good. Today I'm making cowboy candy with the jalapenos and I need to mix the ground beef and pork and get it into 1 pound bags for the freezer. And that brings me to my next interest...

It's one of my favorite tools too!Sure do, one of my favorite tools in the kitchen. I love to use it for veggies for lunch, broccoli and cauliflower in particular.
