OstKake is a Scandinavian slice of heaven. It translates as cheese cake, but is not like american smooth fluffy cheese cake. It's like custard and cheesecake had a baby. Many US people use cottage cheese as a substitute, which doesn't work out right. I make my own cheese and then farm eggs (obviously) to make mine. It's served with Lingonberry syrup or jam and whipped cream. It's a special treat food. We have ours at Jul and at Spring Equinox.

Morktiden is a celebration of the longest night. We spend the day without television, turn on the radio, light candles and enjoy the short day and passing of the longest night.

Rosettes are flakey, light, super nice cripsy cookies made my dipping a scalding hot iron shape into thin batter and then back into the oil to finish cooking. They are sprinkled in various things after removing from the oil. Confectioners sugar, cinnamon, cardamom, chocolate, etc. Think light crispy flaky funnel cake cookies.
Oh OstKake how I love thee! I’ve not had a good one in so long because yes, people use cottage cheese and it doesn’t work. Got a recipe? How do you make your cheese for it?

I celebrate Yule but the rest of the fam does Christmas also. I like to gift the kids also though.

You've reminded me that I forgot to dig up the horseradish, it's been in the ground just over a year now. Maybe I didn't forget as much as I have no clue what to do with it & am scared of it. :gig

You guys are making me hungry. :drool You should post pics of all these yummy things when you make them! Please!!

The tree guys are supposed to be out today to trim the giant tree over the chicken run. I sure do hope they show up! So hard to get tree guys around here because of all the dead trees from the caterpillars & the ash borers - they are booked out months.

OH sure! I'm making cheese today and then the ostkake today or tomorrow. It will be a blog entry. I need to go out and run errands before the snow starts to fly. But then I'll get to work. :)

Horseradish, a plant that keeps on giving. Simply dig near the main plant, find a Rhisome, snap it off and process it. I wash mine and give it a really good rubdown and if it has a tough skin I use a potato peeler to remove the outer skin. Then I put my fine cheese grating attachment on my Kitchen and and shove it through. You can also use a fine food processor. If it's really watery then drain off the liquid.

I mix it with 1 Tablespoon of white or cider vinegar, and 2 T of water, and a splash of salt.
Then slap it in a jar in the fridge for a month. I only make as much as we'll use at a time, storing the unprocessed fingers in the seeding shed- where it's cold, but never freezing.
(Unless it's a batch for sale, then I make a LOT)

I cannot stress enough to keep this away from your face. It could be a bio-weapon. LOL. Outside, open windows, your neighbor's house....lol. Strong.

Yep. I have a upscale friend that said she would disown me if I stuck that in the front yard. When I showed her the picture, she said it was cute
