What did you do in the garden today?

lucky you. I have just sold a gosling and almost cried, although I don't have room and she went to a good home.
Well that's the best when you can find a good home for the ones with a special place in your heart. ❤️

I do love my chickens, I care for each one & when it's their time I comfort them & thank them for all they've given. Anything that lives here lives a charmed life with 1 bad day (like they say). But at the same time I can't say that it has every destroyed me to cull a bird like the heartbreak when I lost my Jazzy dog. 10 years & I still get teary eyed over her sometimes.

I assume it's because I cook the crap out of my bones - 2 days in 2 batches. I don't really care if it's cloudy or not, I'm just curious.

It's also crazy how 1 inch headspace becomes almost 2! How does that happen? The water in the canner is not dirty so it didn't siphon. It's a head scratcher for me, lol.

This Is Why Your Stock Is Cloudy​

There are a few reasons why your stock may have turned out cloudy. Generally speaking, the cloudy nature of stock is simply due to impurities or particles in the stock.

Stock should always be started with cold water and cooked, uncovered, at a simmer, without ever coming to a full boil. If the stock does boil, some of the fat will emulsify into the liquid, which can make it cloudy. Another reason for cloudiness is that the stock wasn’t strained well or at all.

I do use cold water, but my stove cooks it a bit hot, a big simmer, smalllll boil, if you will. & never without a cover - 2 days of steam in the house would rot the place out. :gig Whatever.
