What did you do in the garden today?

I found a good way to squeeze the salt water out of pickling eggplant without a press. I found that I can get most of the water out by ringing it with a hand towel. I feel like pressing it with a heavy object was a waste of time.

I rung the vinegar bath out of my eggplants and place them on a paper towel. If you look closely at the picture, the paper towel is dry.

In addition, I found that leaving them in the boiled vinegar bath for 3 minutes gave them a better texture than 1 minute like my previous posted Scillian eggplant recipe video suggested.

Moreover, I had to squeeze by hand and rinse the salt out of this batch 3 times to get to the taste I wanted. I will use less salt on the next one.

Lastly, I won't go through the trouble of bottling them with olive oil. I will place them in a good container and store them in the refrigerator and add the olive oil and Hawaiian chili pepper water when I eat them. This batch will probably be gone within a week.

That Sicilian eggplant you posted looks good. Quit growing eggplant years ago because it didn't freeze well after making it into eggplant parmesana, my favorite dish with eggplant. Might try growing it again after seeing that recipe.
 
Hello WthrLady, I'm a bit further north of fit like county. Just outside Nairn.
Well, my Doric is minimal- which makes my Fife friends sad, and my Scots Gaelic is non-existent, much to the tears of my Isle of Lewis friends. My Glaswegian, well, I can fully understand it, but no chance I can keep up my end of a conversation. My family hails from around Edinburgh and Stirling, so, Fit Like it is! LOL

I spent all day yesterday cleaning out the garage and the gator and the workshop. I'm paying for it today with my sinus'.

I also pulled a giant trick while cleaning bits out of my car, the black, metal, hidden latches in my truck for the back seats apparently are SHARP. I caught one with the back of my left hand. I ripped a quarter sized hole in my skin leaving just a small bit of skin to hold it on. Two layers of skin gone. BOY oh BOY did that bleed. It looked like I murdered a squirrel in the driveway.

Felt grand cleaning it out and dressing it. :sick
I need to sew little, bright covers for them so that DOESN"T happen again.

As for the garden, another hornworm to the littles.
And the ragweed, well, I'll take the weed eater to it another day.
It's too hot and humid today to bother.
