That is the part I missed...boiled it to simmer! I got it now, I will definitely give it a go.We processed our apples into about 24 cups of raw cider than boiled it on a medium simmer for several hours until it reduced and started to thicken. I checked the consistency with the cold plate method. The 24 cups gave us a grand total of about 1 pint of syrup, but boy is it tasty.
