What did you do in the garden today?

I mentioned earlier that I processed a lot of my home-grown Tilapias and came across this French lady's coconut fish recipe. It gave me a lot of ideas, and I improvised with what I had at home. I used chili pepper vinegar instead of lime and Vietnamese fish sauce instead of salt. I also used a bunch of my home grown 4-inch sweet Marconi red peppers in place of red bell pepper, and I used green onions instead of cilantro. I liked it so much I am going to keep this recipe as a makeshift heirloom recipe.

I chopped up a very large papaya that grew wild next to my fish tank. It tasted kind of bland, so I sprinkle sugar on each layer as I was putting the chop pieces in a container and then at the end, I mixed it in a bowl. Adding sugar makes a big difference for this type of papaya. Sugar turned an average tasting papaya into a high quality one.
