My kitchen counter space is limited as well. This house was built in 1986, with a kitchen for yuppies. The important daily used appliances get to have counter space. The others get put elsewhere, or away. Does your instant pot have a non-stick pot? If not, and you eat rice daily, I'd use the rice cooker if it has a non-stick pot. I grew up scrubbing a stainless steel rice pot almost daily. Not my idea of fun. My 10 cup rice cooker has been replaced by the 3.5 cup, until my grandson gets here. My rice cooker keeps it warm without drying it out, and I also use it to cook other things, like quinoa, or keeping a smaller amount of something warm.
