I am just wondering what these two make. Is it still a purebred?

If I intended to show this bird, what would I show it as variety wise and would it still meet the standard?Variety of bird is the color/pattern and doesn't distract from the breed. If both birds are indeed pure Ameraucana then the offspring is too though they may be resulting in an unrecognized color pattern. Take the blue laced red Wyandotte for example. It's indeed a Wyandotte but an unrecognized APA variety.
By grey chicken I'd assume you mean blue. Blue and black matings result in 50% blue and 50% black offspring. The variety is Blue regardless if the offspring are blue, splash or black. A splash and black mating results in 100% blue birds. Blue on blue results in 50% blue, 25% black and 25% splash offspring.
You'd show it as Blue Ameraucana. With Blue varieties the color blue is what is judged at shows not the resultant black and splash color. All three colors are the blue variety but only blues are shown.
I couldn't say if your birds meet the APA Standard for breed. That's for you to determine by reading the standard and evaluating your birds for confirmation. Below is a link to basic characteristics, a copy of APA Standards book would provide more information with illustrations and search this site for Ameraucana threads would put you in contact with breeders and photos of their birds. Are these from breeder lines? If hatchery stock then they'd be Easter Eggers though sold as Ameraucana. There's a lot of misinformation on this breed and Araucana and confusion by mislabeled EE's.

These are definitely true Ameracauna and breeder stock. I have been misinformed in the past and received five easter eggers instead. They're from a pretty good breeder and both chicks are from the same breeder. I was hoping to breed them when they're grown along with my black copper maran. I was just wondering if getting a splash was okay, but it seems like with my variety, I would be getting all black or blues anyways. Thank you so much for the clarification.
