What do I need to be legal in Tx?

I'm going to start raising pastured poultry on our land in chicken tractor and would like sell excess legally to friends and family and eventually market them to local resteraunts and individuals. I know there's a market for it around locally. I want to make sure all my paperwork is in order. What licenses certifications and equipment,if any, will be required?

Is anybody doing anything like this that would like to share their experience?

In Indiana I can sell legally to willing neighbors and family but for markets I needed to be certified by my egg board. You’ll need an egg scale and an candler at the minimum. Probably proper refrigeration.

I don't think my post was clear... My apologies. I will be selling meat not eggs... That could be a possibility in the future but I have no interest in it at this time.
