I just processed one of my roos and he's now in the fridge soaking in water in prep for tomorrow evenings supper, should I soak him in some kind of solution to tenderize the meat, if so what combination of ingredients should I use??

I researches recipies before processing my first birds and ended up doing what I do every year with Thanksgiving Turkey. I brine in water overnight with just about a 1/4 cup of salt and acouple cups of orange juice.
I have processed many Coturnex quail this way also.

I've also heard of people using applecider vinegar. have not tried it myself but give it to all my birds in their water (even meaties) I say if it's okay to drink...should be okay to soak in? Right? If someone has tried it please let me know.

thanks!

i've never soaked overnight in ACV but have definitely used it in many a marinade to soak for a few hours (yum!). i would worry that maybe the ACV could tenderize and break down the meat too much overnight.....but i dunno?
