What do we do when we start getting eggs??

Hello,
We are new to the chickens, What do we do when we start getting eggs, I mean do we let them all sit in a basket in the fridge for a while keep them out on the table for some time or what?

Wow...just read that thread and got more confused. My understanding...and I live in an area where the rooster is king... ie chicken central. Everyone I know here leaves the eggs out! As soon as you put them in the fridge the yolk begins decay. Eggs are made to last outside until the chicken is ready to sit (for example gracie laid 14 eggs in 16 days and then sat.) So the first egg is still viable and edible at that point. The first laid is supposed to be the last to hatch. I digress...but it's important to realise that the egg is made to "live" regardless of fertilizing or not for a long time before it is used as food or for hatching. But I check every egg before I use it (the water test)> Basically I don't refrigerate....and won't unless they are getting on in age.

I do not refrigerate my eggs for cooking in my own kitchen. For people who expect cold eggs i do refrigerate them. Eggs will keep on your counter for up to 6 weeks in a cool place. Mine never last that long. I collect eggs Friday, Saturday and Sunday for my kitchen. I use those though the next week. If there happens to be anything left by friday I cook those and feed them back to the chickens.

I refrigerate the eggs I sell only because grocery stores have conditioned the general publuc to expect cold eggs.

In other countries, such as Ireland, eggs are keep unrefriderated in a huge stack.

Eggs we keep for our consumption are kept on the counter.

In the old days they were kept in the cellar. If you notice the egg display case is not an enclosed cooler, but an open air case that merely keeps them "chilled". I would say, if you have room in the fridge, fridge 'em, if not, don't. I would keep very careful track of the dates they were collected, though.
