I do a LOT of baking with my large family, and we got through a ton of eggs. I've only got one pullet laying so far, and one egg a day doesn't do much for us. I can't wait til the eggs pick up.
When we scramble eggs, we use 2 dozen at a time. When we fry, we fry almost the same number. We eat a LOT of eggs. It's almost a necessity to have chickens at our house.
If there are times when the eggs stack up (which happened occasionally with my last flock) I give them to neighbors and sell some to our little local grocery store. They pay me $1.89 per dozen, which works for me. I know they'll always buy as many as I have, because there are a lot of people that won't buy eggs from the little store unless they're homegrown.
