What do you all do with your eggs?

I sell the extras, or boil them up to feed back to the birds. The extra protein is good for them, especially the young-uns. Keeps their feathers nice. Right now the demand for my eggs is higher than the number of eggs they're laying - it had been weeks since I had eaten one of our own eggs!

I do a LOT of baking with my large family, and we got through a ton of eggs. I've only got one pullet laying so far, and one egg a day doesn't do much for us. I can't wait til the eggs pick up.

When we scramble eggs, we use 2 dozen at a time. When we fry, we fry almost the same number. We eat a LOT of eggs. It's almost a necessity to have chickens at our house.

If there are times when the eggs stack up (which happened occasionally with my last flock) I give them to neighbors and sell some to our little local grocery store. They pay me $1.89 per dozen, which works for me. I know they'll always buy as many as I have, because there are a lot of people that won't buy eggs from the little store unless they're homegrown.

We feed them back to the chickens for extra calcium.

Well, mine aren't laying yet, but I've got 17 pullets so I should have plenty of eggs. I bake a lot, and I plan on selling them as well.

Yep, these special gold nuggets last a long time in the fridge....most store bought eggs are 4 weeks old or older before they hit the shelf, and you know how long you have kept them after that....neighbors, friends, and family will delete any extras that's for sure....

btw have you ever bought eggs from a "farm" and had them not be good?

I have

(and the health food store eggs and cage free eggs at the market taste the same as well)

there was only ONE time I bought them from a small house with a small flock

they tasted so good I would pay $10 a dozen but that was only once....they dont sell anymore

I think the best thing to do with extras is to make a good old fashioned pound cake. You need to find a recipe that asks for 10 eggs! YUMM!

Also, pound cake freezes wonderfully....thaws just like fresh.

We are such goody two shoes. When our pullets really start laying, we plan to give them away to family & friends, eat them ourselves, and any left overs we plan to haul to the local soup kitchen. I would love to sell them, and we could use the extra money, but we are holding our own financially for now. In my area, too many people are going hungry.
