Healthwise, I'm much more concerned about hydrogenated vegetable oils than bacon grease. It appears that the alternatives marketed as "safer" were, in fact, the worst. Heart attacks were rare before the turn of the last century when cooking with animal fats was the norm. Now heart disease is the number one killer. Historically, a graph showing the increase in heart disease would look really similar to a graph depicting use of trans fats in processed foods. I think I'm going to keep saving my bacon grease.
