I'd like to make the obvious suggestion here:
I would suggest you actually eat it.
Yep, get your daily vegetable intake by consuming the stuff. There are surprising, interesting and delicious ways to prepare and serve the produce from your garden. Investigate them.
That food which you cannot eat yourself, can be frozen or preserved in other ways for later use. Any further surplus can be given to friends, neighbors, co-workers, homeless shelters, church and charity kitchens, homes for senior citizens and so on.
This way your labor, time and resources will not have been squandered, but instead put to their highest purpose, ie, The work of human hand, fostering human life.
