I make them with whatever I have handy. And with garden season coming soon.. that will mean LOTS of GREAT stuff!!
All sorts of veggies. Cheese is a must for me ( dont' need the calories, but there's something about cheese and eggs that is a must-have)
I like to saute or steam my veggies before putting them in the omelette-- I don't really like the whole multi-texture thing with crunchy veggies/ soft eggs.
Right now-- lots of asparagus and cheddar omelettes, since asparagus is in season for me. Very soon will be spinach, herbs, broccoli, tomato-- whatever comes in season. I like meat in them too, but usually only when I've got leftovers ( ham, sausage -- or lunch meat that I need to use up).
The possibilities are endless-- open your fridge, pantry, or run to the garden and see what you've got!!! Try a little, try a lot-- but try it all
...now I can't wait for breakfast... I have asparagus I cut today, chilling in the fridge in a dish of water... Yum..... that's what it'll be tomorrow!! ( or tonight if I don't go to bed soon!
