What do you put in your homemade turkey noodle soup??

Scallions are a must, rosemary, garlic, parsley. Sweet potato, rutabaga, carrots, parsnip, chopped green beans and if available, I add snow peas or sugar snap when I turn off the heat. I like a colorful and very chunky soup, more food than broth. Oh, and mushrooms. I have been known to throw in a bit of brocolli if milder green stuff is not available.

No "white stuff" in my soups....no noodles, rice, potatoes, etc. I do like a biscuit or nice piece of buttered sprouted grain bread on the side.
 
Every so often I turn it in to a "Must Go Soup" meaning I toss in all the leftovers in the fridge that, well ... must go! I'm careful with really strong tasting veg like rutabaga or turnip, that can overwhelm a dish, but pretty much anything else is fair game. I always start my Must Go soups and stews with a good basic home made stock and then just add whatever is handy.

Good friends of mine have a large pot of soup simmering for days. They add more ingrediants as the pot gets low and just ladle soup out when ever someone needs a snack. It's perfect for a large family of grown kids home for the holidays.
 
I canned the soup base for the 1st time this year and opened a jar for Dh last night and added egg noodles.... YUM!!!

Mine had all of the same ingredients others have listed. I just had to brag that I canned it and it tasted good
