i like them w/ white pepper and slightly underdone!

i like baked eggs for a change....

grease muffin pan cups
add one egg per cup
add a dash of milk or cream
add favorite spices...dry mustard or paprika/salt/pepper
bake at 350 F until firm.

super yum when i am burned out on scrambled.

I love to put sour cream in them before cooking, and then add diced tomatos, diced onion and lots of hot sauce. However, the BEST thing to top your scramblers with is chunks of ripe avacado. Just make plain eggs with a little salt and top em with the green goodness. Ohhhhhhhhh.... SO YUMMY!!!!!!!!!

I'm surprised I haven't seen it yet, but I add baking powder. It makes them super light and fluffy. Makes you feel like you've eatten more. I also sometimes add the other stuff like milk/cream salt pepper, cheese.

If I have a nice salted omlet, I sometimes like to spread jam on it an roll it up. Sometimes I roll bacon and cream cheese up in it instead. I first discovered that combo at a restruant and they called the omlet "do wa ditty".

I did steamed broccoli and parmesan when i was pregnant. My husband cooks bacon then uses the pan to make the scrambled eggs, adding back in bacon and tons of local cheddar cheese.

Where are you from, if you don't mind my asking? Jam seems like it may be an English thing...?

* Salt, pepper and curry powder, OR sharp cheddar, salsa and scallions, sour cream, OR my special sauteed mushrooms and onions. When in a rush, I quick-scramble mine with a little half n' half in the microwave (being careful not to overcook them.)
