What do you use your duck eggs for?

When I was at Tractor Supply the other day grabbing another Nurture Right 360 Incubator one of the workers asked me if I had ducks (I like to remove the entire turner from the Nurture Right Incubators, lay down a rubber mat and use them as emergency units that I keep warmed up for hatch days). Anyways, when I told them that I do have ducks they then asked me what I do with the eggs. They then went on to say that their family throws them out into the woods because "duck eggs taste like fish". Now I have never had a duck egg "taste like fish" in fact, when people who have never had a duck egg in their life come to stay with us they end up loving duck eggs and ask for my recipes. I guess this is more of a discussion than anything, but the TSC conversation had me curious about what everyone does with your duck eggs? Do you use them to bake and cook? Do you toss them? Purely incubation purposes? Compost for your garden? Some other creative use?

i use them for anything you’d use chicken eggs for, i never got how people didn’t like them haha. though, definitely prefer to use them for omelets.
 
I eat mine. And, I have a family of bakers who prefer my duck eggs to my chicken eggs. I'm amazed at how many people who have not eaten duck eggs are sure they won't like them.

A couple of years ago, I had a customer who asked me not to include duck eggs in her cartons of chicken eggs any more.
Then, her boyfriend asked me to only send duck eggs his way. This week, she told me she's changed her mind -- and now takes half of the duck eggs out of his cartons, replaces them with her chicken eggs, and sends the mixed carton on to him. See, they can come around !
 
My two ducks who lay are on medication indefinitely so we have to compost the eggs. :hit My other duck doesn't lay.

When we did have edible eggs, and lots of them, my partner ate lots of eggs! Scrambled or fried in sandwiches mostly. We also gave them to my in-laws who used them as one would normally use eggs and baked with them. My best friend loved them! When she ran out of duck eggs and bought chicken eggs once she could barely finish them. She said after she got used to eating my beautiful duck eggs chicken eggs tasted like wet dog. I was so proud. :-D
 
I eat or bake with my duck eggs. They may taste fishy or off depending on if the ducks are eating lots of fish and other creepy crawlies from the water, from what I’ve read. So if your ducks are on a pond eating lots of strong tasting/smelling things, they could pass that smell/taste on into their eggs. :) same as some types of plants can taint milk, for example.
 
We eat ours too and prefer them, but my ducks eat mostly Purina duck pellets. I agree with Trisseh that the fishy taste probably comes from what they eat. Seems like people who do not like the taste have ducks who spend a lot of time on ponds. Btw, ducks eggs make fabulous fresh pasta!
