The hen squats like that for the rooster to mount her. After the mating and he dismounts she will ruffle her feathers. It is also a submissive thing. I do not have a rooster with my hens and when one is close by sometimes they will squat. I will reach down and stroke her back. When I quit she will get up and ruffle her feathers.
I have never seen it demonstrated towards humans if there is a rooster in the flock.
