I have 3 Wyandotte hens. Two are quiet, the other is the loudest girl I've ever had! Constantly making noise! But I think you'll find noisy specimens of every breed (and quiet ones too).
Surprisingly, my Sebrights are pretty quiet. Even the rooster. The only time I hear him crow is if someone he does not know comes by. I don't know if other Sebrights roosters are like that but I know I got a keeper
My Wyndottes are definatly towards the bottom of the pecking order, but I don't think that this is totally why they are the quietest. They are also the calmest- not flighty at all. I'm not sure I have ever heard them make any kind of clucking noise. I have a EE that is at the top of the order who is always talking to me. Not annoying so, but just to let me know she is there. Just a very low sounding broook. I can always pick out here noise from all the others. My speckled sussex on the other hand- never shuts up and is very loud. Kinda like an annoying mother-in-law.

About half of my cochins never sing the egg song, just chitter at me quietly when I'm in the room, but my roosters love to talk to me. We have full blown conversations sometimes.
