Sure, still working on the kinks, but tonight was a good run...
1/2 c Honey
1/3 c Almonds or Pecans (raw if you got them)
1/4 c Panko (normal bread crumbs are ok too, unseasoned please)
1 LB chicken thighs or quail halves
put nuts in food processor and chorse chop (they shoud look like the mc donalds peanuts that go on sundaes).
toss in bread crumbs and mix.
Drizzle in honey untill you have a paste of nuts, crumbs & honey. Coat meat in paste (it's a bit like crunchy peanut butter, I use my hands for coating).
Bake 350 for 15-25 minutes untill thermomotor says 160.
Serve on spinach or greens with a raspberry vinagrette and a white wine (wilson creek almond champange would go well).
