If you don't want a giant breed, herding dogs are usually gentle but want to move the chickens about so that can get annoying if you don't teach them that chickens are not for herding. All of my collies have been good with chickens but one could not suppress the need to herd them. When raised with them setters and spaniel types are usually very gentle with them. I know of one Irish setter that brought a loose baby chick back to it's owner and set it gently in in their lap, the chick did not have a scratch on it!
Of course each dog is an individual but as has been said, if they are raised with chickens most dogs with the exception of Terriers, Hounds and sled type dogs should do well.
