What is "dewing"?

I saw this on a hatchery website I dont know what it means, do you?
 
It has something to do with a bone they remove in a chickens wing to prevent flight. I think that' swhat it is.

De-winging is where they remove the outer-most tip of the wing where the primary flight feathers grow to keep the chickens from being able to fly.
