I see a problem with the front doors, they look as if they can move enough for something to get in. I would suggest closing up all the holes, no matter how small. I bet something is sneaking in and going out the pop door or out your front door. It has to be a very tight fit. JMO.

It looks like if you push hard enough at the bottom corners that the doors would give..... Maybe a few more latches would help?

From the picture it looks like something could pull the doors out a few inches from the frame and then slip under them to get inside.
 
I agree with everyone I bet it slipped in under the doors because it looks like it sticks out an inch or two. Also a weasel can squeeze through chicken wire and a raccoon and fox can tear through it so be careful and good luck!

Your coop looks similar to mine in most aspects and the only interior predator I have had was a weasel that got in through a quarter-sized hole under the door. He kill my 3-yr old birds but was not strong enough nor was his entry hole large enough to get them out of the coop. Also, aside from a head or two, he didn't take much more than the blood. Consequently I assume your problem is not a weasel.
 
I think I read the entire thread. What sticks out to me is open area under the coop I see almost 2" gaps between steps. and the fencing is fairly open.

I would lay 1/2 or 1/4 inch hardware cloth all around the base of that building. Fold it so that at least 6 inches are flat on the ground and another 6" are stapled generously to the siding boards. And any gap near or on the stairs.

It looks like a critter is burrowing into the coop, and dragging prey out .

Are there any telltale hairs on fencing? even one may help you indentify.

And, heck yes on the game cam. you can get one for around $50.
