What is my hen doing??

Quite some time ago, we enlarged our flock slightly so our rooster had companions. The small flock soon matured and begin to lay, much to our joy. Recently, one of the hens has been making small nests for herself in odd places (They are all free-range around our property.). At first, we assumed she might be laying, but that would be rather abnormal as we often collect from their laying boxes. She also lays only 1 egg a day, and that is in the early mornings. She sits in one position as if laying an egg, and when I tossed them their favorite food scraps, she did not budge. When I went closer to her, she begin to growl at me. My first assumption was that she might be slightly broody, but there have been no indicators that she could be broody in the slightest. Often, when the hens are making small nests and laying down in the ground as such, and I approach, they get disturbed and scatter amongst themselves. They only growl if I walk into their nesting room by mistake. I am truly clueless to why she is doing this in the most absurd places, and would appreciate any guesses. Thanks!
 
I have a hen who is extremely possessive of her nest. When she's in her spot she does not share it with anyone and will growl and peck to prove her point. Once she lays her egg she's fine.
