You may already know this, but in case you don't.
THis is what I have learned from the time I entered college in 1980, earned my BS in Animal and Vet Sciences to now. You will need to go college for 3-4 years, 4 to get your bachelors. Then graduate school to get your veterinary degree, say 4 years.
Having said that, the professors at the University of Maine are PhD's not usually vets; The one vet was an interesting fellow, Dr Corey who taught all the vet tech courses, not the prevet courses, and he tended the dairy and beef cattle as the university's vet. All the prevet classes were taught be PhD's.
Maine is a huge egg production state.
Keep digging for information; livestock vets are vets that specialized during and AFTER earning their vet degree; states hire vets for the slaughter houses and inspection of the super large production facilities. Some dog/cat vets also specialize in birds like parrots, though not usually chickens and farm birds.
