I use a killing cone, slice the the neck with a very sharp knife, allows the heart to pump out the blood, and the cone keeps them from flopping around and they are gone pretty quick only takes a few seconds for them to bleed out. then into the water (if i am plucking) and then the processing and then the brine bath.
However when i am feeling lazy and have more than a dozen birds to do at once, there is this great Amish family up the road that for a buck fifty has them all put together in neat little bags for me when i come back to pick them up. i would have to say that is most painless way for me to process them...
