I think the closest this pullet comes to a breed is a Brabanter. How would I know if it's a Brabanter, Spitzhauben, or -a Polish mix?

Hmm,
Looks like a polish, just poorly colored. I have a silver laced polish myself. He was form a shipped egg. Not sure if it had anything to do with it but his coloring is weird and he has a buttercup comb. I asked Perfectly Polish if she has any buttercups and she doesn't. So sometimes we have pure breeds that look really funny.

LOL I am not so sure that it is a brabanter-mix. I have a young polish that has the very high nostrils.
Here is a pic of my little unique guy.

Perfectly Polish assured me he is a pure breed.

He is just different.
