Hatchery sourced Polish can vary quite a bit in size. There are both bantam and standard sized types.

Looks like your Polish are muffed, so you're not likely going to see hardly any wattle development at all. You'll have to wait till about 12 weeks old, when the male specific feather start to become visible, to get an accurate gender assessment.
