What made you happy today?

What made me happy today was going to a township meeting about an upcoming tax. Yes, really.

The township board had sent out a couple of letters that were full of legalese and made the situation sound like there were some shenanigans going on. The in-person explanation was clear (not very concise, but it was a long topic), and the information was something people could understand, even if they didn't agree. The amount of money, while not nothing, is not exorbitant, and it is for Fire and EMS service in our township. I can understand why they are doing what they're doing, and I would probably do the same were I in their place.
 
I'm currently enjoying a bowl of the chili that has been bubbling away in the crockpot all day. My chili has won 3 different workplace chili cookoffs at three different companies, so I think I can safely say that it's pretty good chili.

Well, I don't measure much, but this is about it...

3 cups of dried pinto beans
2 pounds of ground or shredded meat (I used bison this time, but I've used beef, quail, or turkey)
1 onion
1 bell pepper
32 oz of tomato sauce or stewed tomatoes
16 oz tomato paste
2 large bay leaves
1 Tbsp salt
3 Tbsp chili powder
3 Tbsp ground cumin
2 Tbsp brown sugar
Tabasco to taste (1-3 Tbsp)
You can add other peppers if you like. I added some jalapenos that I had lying around to this batch.

Soak the beans overnight
Simmer the beans for 3 hours or until tender (An Instant Pot can shorten this time dramatically)
Brown meat and stir in the onions and peppers
Throw everything into the crockpot, stir well. Add liquid from the simmered beans if it needs more liquid.
Cook on high for 4-8 hours.
Don't forget to remove the bay leaves before serving.

It's even better the next day!

I don't know what would make me happy today, but I will try to make myself happy which is very hard...with all that winching, complaining, low energy, laziness....so many hurdles:lau

Yesterday I listened to the song that I like so much - Tom Jones Delilah song...Why, why, why Delilah......then I realised this song lyric is describing domestic violent from an X.
