What mix and gender is my chick?

Do you know what hatchery your store used? Might be able to narrow it down that way.

I asked my store they said they didn't know.

I just realized that the rooster with the strawberry comb in this article looks so much like Matilda. He even has black feet with yellow bottoms!

Maybe that's why I can't think of it. It probably is a kind of chicken that is not available from US hatcheries. Being further north, hatcheries in Canada would have more reason to develop more chickens with cushion combs, as compared with hatcheries in the US.

Maybe you could ask the store what hatchery they order from? Then you could look at what kinds of chicks that hatchery offers.

I tried. They said they did not remember. I could ask them again. They should have it written somewhere.

Ask to speak to their purchasing manager. Most stores have one or two people who do all the ordering.

That's ok. There is one person at that store who does the ordering and will either know where things are purchased or will know how to look it up. Otherwise they would quickly go out of business.

Yes, he does look very much like her!
I tried to figure out what breed he is-- no luck. There was a link to a thread with the picture

The owner listed his breed as "Jersey Giant" but then said they were not sure. Since Jersey Giants have single combs, he must be something else, which just leaves us guessing again. The poster's location is listed as Arizona. Unfortunately, that post was from 2016, and was the only post made by that poster, so I don't think we're going to get much more information from that. (But we do know that a chicken of that appearance existed in 2016, probably in Arizona unless the person changed locations sometime since then.)
