Out of curiosity I searched up "sapphire gem chicken" and "sapphire gem rooster". They do look like NekBother (Ellie's father). And also like a few others that I have, such as this lil guy

From some guy who I thought was selling me pullets but sold me cockerels and two pullets, Bananito and Tomatilla, which Tomatilla laid the egg that hatched Ellie. The guy sold me 11 cockerels which I kept 2, NekBother and Sam. Nekbother was Ellie's dad. Didn't tell me the breed. That cock is from Bananito+Sam. I think Sam is some kind of Leghorn? Here he is with his love Samantha.
