What plants to grow indoors during winter?

I'm in zone 4 and with the winter season already here, I'm running out of things to prune in my greenhouse to supplement my 30 chickens and 15 ducks with healthy snacks.... what can I grow abundantly and speedily inside my comparatively smaller indoor greenhouse window that I can cut and come again for treats each day?.....I did fodder trays last year but it is so stinky 🤭and require daily rotation/reseeding of trays 🤑 ....any suggestions?
 
I've been growing grass in empty salad containers, and can keep feeding them the trimmings after it gets too cold out to keep using the grazing frame. Also trying to grow some dandelions.

This is what I was going to suggest--I think of how most elementary schools at one time grow cups with "hair" so it has to be pretty fool proof :)

Herbs are also a good one.

I would think that you would be able to grow some variety of lettuce as well.
