well i want pied or birchen large fowl but dont know where to start

What do you mean by pied? Extreme mottling as in exchequer leghorns?

There are mottled cochins but I don't think there are mottled wyandottes in US.
I think there may be birchen cochins too but again I think not in wyandottes....not sure.

If a gene which is needed for the colour is not already in the breed, one needs to outcross. One looks to find the outcross to a breed with the type closest to the breed in which one is trying to create the new colour.
