I was given 2 eggs to hatch so I don't know breed/sex. I am thinking the brown one is an Americana/Female, but the white one is a rooster--correct?

Definitely a cockerel.

The brown is an Easter egger pullet. The white is probably an Easter egger crossed with something else, and a cockerel.

Americauna is just another name for Easter eggers. True Ameraucanas only have a few specific color patterns, and your chicks don't match any of them.
