I see many pictures of people using a string or metal leg thingy to tie their chickens to separate them, they'd ussually kept with a female and have something to give them shade. What can I use to tie around their leg? Such as what they have in the picture.

They're called tie cords. Mine are soft bungee type like on a surf board.Very easy to find online.I haven't had to replace mine in years,also they are hooked to a swivel then to a small rod that pushes into the ground. My neighbor just got about 50 off eBay real cheap. Hope this helps.
