what should the rooster\hen ratio be for Chukars?

If raising them like most quail 'backyarders' do, a ratio of 1 male to 3 females, this is if the cage or pen is small, ( 1 sq.meter).

If in an 'on ground' type flight pen, a ratio of 4 males to 12 females is generally the ratio most breeders use. (300 Sq. Ft. and up).

A pen that is as big as you can either afford or have the room to build. Approximately 4 to 5 sq.ft./bird....with gamebirds, bigger is better.
 
I read that they should not be kept on topsoil, or in wet climates how much truth is there to that?
 
and I'm curious about the same things for northern bobwhite.
 
If by topsoil, you mean regular native soil, then yeah, it's perfectly fine as long as it has good drainage. No gamebirds like or do well in muddy, wet, drafty conditions. If your in a wet climate, then think of covering the top of the enclosure, to help keep the enclosure dry as possible.
