What to do with absurd amounts of fennel

I am jealous! We have to buy it up here.

I use it solely for pre-boiling country-style pork ribs in.

I put about 1/2 cup of fennel seed, a whole apple, whole onion, peppercorns, celery leaves, 1/2 cup apple cider vinegar, and seasoning salt along with the meat in a big pot. Fill with water to cover the meat. Boil that then simmer for an hour, two is better. Then drain, cool, and pick all the stuff off, and grill the meat, or you can put whole baby white potatoes and saurkraut in with the meat and simmer that for half an hour or so.
 
I made it for the first time this weekend. I used the "tomato and orange soup" recipe from Sugar Solutions cookbook. We both liked it.

Try Julia Child's fennel and potato soup. I don't remember what it's called but it's delicious.

Edit. Just Google Julia Child's Fennel and Potato Soup. AI has the recipe. It's also available on Pinterest but it's awkward to get to.
